If ever there was a week to toss real food out the window in the name of convenience, this was the week. Each night this past week our family participated in our church's Vacation Bible School (VBS). My girls were active and eager participants, I taught two 3-year-old classes, and my husband served as chief cook and bottle-washer for the remaining two littles who stayed put at home.

And we were a tired bunch as the week drew to a close.

In preparation for the nightly change of schedule I decided to switch our menu up a bit and plan our largest meal for the lunch hour, leaving the few moments we had before rushing out the door at 5:30pm for some real food snacks.

Although it would have been easier to resort to fast food all week (and in fact we did enjoy the convenience of a pizza delivery on Friday) I really wanted to maintain a healthy menu to compensate for the stresses we'd be experiencing this week like less sleep, more germs, and sugary VBS snacks.

In the end, it worked out well. My husband works from home so this afforded us the ability to have a hearty meal mid-day. But even if he wasn't home, we still could have served a big lunch and saved him a plate for dinner. It was a good reminder to me that with a little creative thinking and planning ahead, it is possible to eat well even during the busy times.
