April is Nettle month here at the Nourishing Herbalist. April means spring -- the best time of year to wildcraft (harvest) nourishing herbs from your own backyard or in fields, woods or ditches nearby*. Hey, you can't beat free nutrient-packed food!

Should you be unable to find fresh Nettle you can always reconstitute dried nettle in hot water for a minute or two and then drain before use in any recipe calling for fresh nettle. Or, if you happen to be made of money you can order fresh Nettle leaves online.

With Nettles in hand (hopefully it's a gloved hand!) prepare to wow your family with this scrumptious quiche recipe we fondly call, the Green Goddess of all quiche recipes!

Here's what you'll need:

Green Goddess Quiche
Ingredients
  • 1 nine-inch pie shell
  • 6 large slices of bacon
  • 4 eggs, beaten
  • 2 egg yolks
  • 1 T. flour
  • 2 cups half and half
  • 1/2 t. salt
  • 1/8 t. nutmeg
  • dash of pepper
  • 1.5 cups grated cheese (we used a combination of Cheddar, Swiss and Parmesan)
  • 1 cup fresh nettle, blanched and finely chopped
Instructions
1. Preheat the oven to 325 degrees.2. Prick your pie shell with a fork and then bake at 450 degrees for about ten minutes or until the edges brown. 3. Blanch your nettles (be sure to use gloves when handling nettle prior to blanching!) in boiling water for 2-3 minutes until tender. Remove any stems and finely chop.4. Lay bacon on a cookie sheet and place in the oven when your pie shell is done baking, Cook until crisp, about 10 minutes. Then, chop.5. In a medium bowl, mix the eggs, yolks, and flour together. Add the other ingredients, including the bacon and nettles. Pour the mixture into the pie shell.6. Bake for 50 minutes or until a knife inserted in the center comes out clean. If the shell starts to brown too quickly, cover the edges with aluminum foil. Enjoy!
