Please forgive us for the sporadic posting this week. I've been out of town several days for a wedding and Rachel has been busy planning for and celebrating her son's 1st birthday. We will be posting our Weekly Fitness Challenge report here shortly and perhaps most exciting of all, the conclusion to our essential oil company comparison, which I found to be really insightful and I hope you will, too!

But in the meantime, here's a yummy (and herb-free) recipe to tempt your palate.

Every now and then I do the awesome mom thing and serve chocolate chips for breakfast. My husband has fond childhood memories of eating the ever-popular chocolate chip pancakes for breakfast, but alas my mother never fed those to me. ::Moment of silence for my depraved childhood.::

I have my own breakfast treat memories thanks to this recipe acquired by my mother years ago from a popular bed and breakfast stop  -- known as The Old Barn -- near Gettysburg, PA. Unfortunately The Old Barn (which truly was a massive, renovated barn used to house wounded soldiers during the Civil War) burned to the ground several years ago, but this recipe has lived on as a family favorite.

My mother is partly responsible for my interest in healthy eating and natural living, so you can probably image what a big deal it was for her to serve just white chocolate chip scones for breakfast. But therein lies the secret. They aren't just scones filled with white chocolate... but also -- are you ready for this? -- PRUNES. Yes, prunes. And my children gobble these up as quickly as I do. 

I'm not a huge fan of white chocolate (heck, it's not even chocolate! Give me 72% dark any day!) but it is a wonderful compliment to the prunes in this recipe. My second born inquired as she was plucking the white morsels out of her scone if they were made from popcorn. A rather interesting question I thought. Unfortunately, there is precious little in white chocolate that is good for you, but even so you can level the nutritional playing field by buying organic chips like these that aren't made from hydrogenated oils and other science experiment ingredients. And hey, you're adding prunes to a breakfast food. Doesn't that count for something?

White Chocolate Scones
Ingredients
  • 2.5 cups whole wheat flour
  • 4 T. baking powder
  • 3 T. organic flax seeds
  • 8 T. cold butter, diced
  • 1/4 cup Rapadura sugar
  • pinch of salt
  • 1/2 cup white chocolate chips
  • 1/2 cup prunes, roughly chopped
  • 3/4 cup whole milk
Instructions
Preheat oven to 425F. Place flour, baking powder, flax seeds, butter, sugar and salt into the bowl of a food processor.Pulse mixture until the butter resembles small pea-sized crumbs.Dump contents from the processor into a large bowl. Gently mix in the chocolate chips and prunes.Drizzle milk over the mixture and toss gently with a fork until the mixture begins to clump. Dough should be sticky. If not, add more milk.Dump mixture onto a well-floured surface and carefully mold into an 8-10" disk approximately 1" thick.Place disk on a baking stone or cookie sheet and bake for 8 -12 minutes.
